İstanbul'un Gurme Osmanlı Mutfağı... Nar Lokantası / Gourmet Ottoman Cuisine at Nar Lokantasi

Beni çok heyecanlandıran bir restorandan bahsetmek istiyorum. Nar Lokantası... Türk ve Osmanlı mutfağını şık bir ortamda müşteriye sunan bir yer burası. Bir cam vitrinin arkasında sıralanmış tencere ve fırın yemeklerini gözünüzün önüne getirin; şimdi dekoru lüks bir restoranınkiyle değiştirin ve işte size Nar Lokantası. Karnıyarık ve kaşarlı pide gibi bilindik tatlardan oluşan menü sizi aldatmasın; şefin yemeklere kattığı farklı yorumla tam bir lezzet şölenine dönüşüyor ziyaretiniz. Yabancı misafirleri ağırlamak ve Türkiye'nin lezzetlerini onlara göstermek için çok güzel bir yer olmakla birlikte arkadaşlarla keyifli bir öğlen veya akşam yemeğinde de bir araya gelmek adına ideal bir ortam.

If so, imagine the same concept for Nar Lokantasi, but with the Ottoman cuisine. This restaurant, located in the Sultanahmet area, excites me so much cause there is no similar place in Istanbul. Sıcak bir yaz gününde, yemek yemeyi seven annem ve babamın arkadaşlarını da toplayıp Nuruosmaniye'deki Nar Lokantası'nın yolunu tuttuk. Osmanlı tarihini iliklerime kadar hissettiğim bu bölgede Nar'ı açmak çok ama çok doğru bir karar olmuş. Restoranın lüks tasarım mağazası Armaggan'ın beşinci katında olduğunu gören babam hiç de mutlu olmadı. Biz bayanlarsa yemek sonrası hızlı bir tur için hemen anlaştık. 
Restorana girer girmez ilk gözümüze çarpan muazzam tatlı büfesi ve sonrasında Nar ürünlerinin sergilendiği masa oldu. Hemen tatlı büfesine koşmamak için zor tuttum kendimi. Bizden önce gelen arkadaşlarımız bize, oturmadan salata büfesine uğrayıp kendimize birer tabak hazırlamamızı söylediler. Salata büfesi ot delisi olan annem için tam bir şölen. Anadolu'nun çeşitli yörelerinden tamamen doğal ve organik ürünlerden oluşan büfeyi, ve aslında menünün tamamını, defalarca fotoğraflamadan edemedim. 
Sonunda, zeytinyağlı bakla, deniz fasülyesi, fava, acur turşusu, kırmızı biber, piyaz, taze fasülye ve pazı sarmasından oluşan bir tabak yaptım kendime. Yeşillikleri anneme bıraktım. 
Pazı sarmasında hiç sevmediğim kuş üzümü yok neyse ki. Onun yerine vişne ile süslenmiş ve bu sayede vişne suyu da sarmaya karışmış olup hoş bir tat vermiş. Fava yumuşacık ve beraber hazırlandığı dereotu ile hafif ve yaza uygun bir tat olmuş.    
Piyaz ne kadar enteresan olabilir ki demeyin; utanmasam bu tabağın tamamını yiyecektim. Dipdiri piyazlar, kokulu kırmızı soğan, renkli biberler, maydanoz, taze soğan...tamamen organik ve doğal olan bu sebzeler mis gibi bir tat vermişti piyaza. 
Kırmızı biber lezzetli ama bir o kadar acıydı. Ben ki övünürüm acıya dayanıklı olmakla, bır tanesini zor bitirdim. Varsa aranızda kahraman, hadi buyurun deneyin :). 
Salata büfesinden favorim deniz fasülyesi oldu. Adını ilk defa duyduğumu ve ilk gördüğümde acaba deniz börülcesi mi diye şüphelendiğimi itiraf etmeliyim. Hafif acı ve ekşimsi tadıyla harika bir ot keşfetmiş olmanın mutluluğunu yaşadım o an. Büfeden bir şey almasanız da deniz fasülyesini denemenizi şiddetle öneririm. 
Bir çoğumuz gibi ekmeğe düşkün olan benim için, iki tipik Türk ekmeğinin - lavaş ve pide - sofraya gelmesi harika oldu. Tulum peyniri, zeytinyağı ikilisine bandıra bandıra karnımı baştan doyurma hatasında bulundum her zamanki gibi :). 
Bu arada tulum peyniri zeytinyağı sunumu tam anlamıyla muhteşemdi. Etkilemek istediğiniz bir misafiriniz olursa böyle bir yolu deneyebilirsiniz. 
Ekmekten bahsetmişken... sağlıklı salata tabağımıza sağlıksız bir şeyler de eşlik etsin diye pide söyledik. Alıştığımız tatlar yanı sıra farklı içerikli pideler de mevcuttu menüde. Merakımızdan patlıcanlı pide istedik biz de. Közlenmiş patlıcan, kaşar peyniri ve dana kavurmadan oluşan pide tam anlamıyla lezizdi. Özellikle patlıcanın baskın olması çok farklılaştırmıştı tadını. Pideyi deneyecekseniz, ki bence denemelisiniz, patlıcanlıyı tavsiye ederim. 
Henüz ana yemeğe gelemediğimizin farkındasınızdır herhalde :). Gerçi bu zamana kadar bu oburluğumuza alışmışsınızdır. Menüde mutlaka tadılması gereken lezzetler ve ayrıca o güne özel çıkan yemekler de mevcut olduğundan, ve hepsini denemek istediğimizden, herkes farklı bir şeyler söyledi ki birbirimizden tadalım. Bu arada masada Nar'ın Nar Gourmet markası altında pazarladığı ürünleri de yer alıyordu. Onları da es geçmeyelim :).  
Gecenin herkes tarafından en çok beğenilen yemeği kuru erikli taraklık oldu. Kuzunun pirzolalık yerinden yapılan taraklık yumuşacık ve suluydu. Kuru erik sosuyla harika bir ikili oluşturmuştu. Otlu pilav hem hafif hem aromatikti; bayıldım. Közlenmiş biber de tabağa güzel bir renk vermişti. 
Kuzu kuşgömü'nü ben ilk defa burada yedim o yüzden kıyaslama yapamayacağım maalesef ama etin tadına bayılmış olsam da daha yumuşak olmasını beklerdim. Belki de doğrusu böyledir emin değilim; ama onun dışında aroması, patlıcan sosu, altındaki beğendi ve yanında servis edilen otlu pilav harikaydı. Özellikle beğendi hayatımda yediğim en hafifiydi. 
Ustamızın ısrarıyla, menüde olmayan, o gün için özel hazırlanmış Sandal Sefası'nı istedik. Biraz karnıyarığı andırsa da tadı çok farklıydı. Patlıcan, dana kuşbaşı et, mantar, domates, biber, kuru soğan ve eritilmiş kaşar ile hazırlanmıştı. Özellikle dana kuşbaşı et beklediğimden çok daha fazla farklılık ve güzellik katmıştı yemeğe. İç pilav olarak da bilinen kuş üzümlü pilava ben hayatım boyunca bir türlü ısınamadım. Yine de hakkını vermek lazım, güzel hazırlanmıştı ama yine de benim tercihim otlu pilav. 
Rezene düşkünü annem için menüdeki kuzu etli rezene kolay bir seçim oldu. Un, yumurta ve limon ile terbiye edilerek hazırlanan bu yemek inanılmaz hafif ve lezizdi. Yanında servis edilen semizotu ve yoğurt ile neredeyse diyet sayılabilecek gurme bir yemek olabilir. 
Hiç tartışmasız en sevdiğim sebze enginar. Eskiden annem zorla yedirirdi; şimdi ise bayıla bayıla. Yaşlılığın işareti bu galiba :(. Neyse, konumuza dönecek olursak günün en güzel tabaklarından birisi, yine o güne özel, sıcak enginardı. Patates, havuç ve kuru soğanla hazırlanan ufak enginarların hem yumuşak hem de soğan gibi dilimleniyor olmalarına bayıldım. En ufak bir kılçık olmaması daha da önemliydi. Harika bir yemekti. 
Daha önce de size yerli şarap tüketimini ne kadar desteklediğimizden bahsetmiştim. Nar Lokantası'nın da en beğendiğim özelliklerinden birisi onların da yerli şarapları öne çıkarmaya çalışmaları ve menülerinde hiç bilinmedik Türk butik üreticilerin şaraplarını bulundurmaları. Bize 2010 rekolte Vinolus Chardonnay önerdiler. Normalde Chardonnay'den beklediğim yoğun meşe fıçı ve yağ aromaları bu şarapta pek yoktu. Onun yerine daha meyvemsi ve canlı (fresh) bir tadı vardı. Bir yandan Chardonnay'in yumuşak dokusunu da hissettiriyordu. Harika bir şaraptı. Aynı markanın kırmızısını da denedik yalnız ya henüz çok erkendi ya da istenilen tat elde edilememişti. Fazla yavan geldi. Bu arada masaların yanı başında yer alan kav çok güzeldi :). 
Sıra nihayet ilk girdiğimizde gördüğümüz tatlı büfesine gelmişti. Geleneksel Türk ve Osmanlı tatlıların hepsini bir arada bulabilirsiniz bu büfede. Rengarenk akide şekerleri, çeşitli aromalı lokumlar, badem ve fıstık ezmesi,  haşhaşlı şekerpare, kabak tatlısı, kesme sakızlı hünkar muhallebi, cevizli sarma, profiterol ve daha neler neler... hepsi de birbirinden güzeldi. 
Haşhaşlı şekerpare favorim oldu. Ağza haşhaş tanelerin gelmesine bayıldım. 
Cevizli sarma için babam tıpkı annemin yaptığı gibi dedi. Bu inanılmaz bir iltifat! Bir restoranın tabelasında öyle bir şey görmüştüm; "Tek rakibimiz anneniz" diye. Hayran kalmıştım:). 
Kabak tatlısı kocamın sevdiği gibi, yumuşaktı. Ben sert olanını daha çok seviyorum ama bunu da o kadar beğenmemin sebebi içinde çözemediğim farklı bir aromasının olmasıydı. Şaşırtıcı ve hoş bir lezzetti. 
Profiterol sevmememe rağmen buna bayıldım. Bunun sebebi portakal aromasının da eklenmiş olmasıydı. Sunumu da tadı da çok başarılıydı.
Badem ve fıstık ezmesi de her zamanki gibi çok güzeldi. Onları beğenmemek mümkün değil zaten.
 Büfede aynılarından olmasına rağmen kahvenin yanında güzel bir sunumla lokum ve akide şekerlerinin gelmiş olması da keyfimizi pekiştirdi. Özellikle damla sakızlı lokumu denemeden dönmeyin. 
Yazacak çok şey olunca haliyle biraz uzun bir yazı oldu ama son bir kaç bilgi de verip noktalayacağım. Nar Lokantası'nın Armaggan'ın beşinci katında olduğundan daha önce de bahsetmiştim. Yemeği bitirdikten sonra diğer katları da geze geze çıktık binadan. Dördüncü katta Culinary Center, yani Yemek Sanatları Merkezi, yer alıyor.  Anadolu'dan çeşitli ustaların davet edilip geleneksel lezzetleri pişirdikleri, izleyenlerin de sonradan hepsini tadabildiği, bir çeşit yemek eğitim enstitüsü burası. 
Üçüncü kat sanat galerisi. Çok sevdiğim ressam Yiğit Yazıcı'nın tabloları da burada satılıyor. Bir kaç ayda bir değişiyor sanatçı ve tasarımlar. Çok pahalı diye çekinmeyin, her bütçeye uygun alternatifler mevcut. Örneğin arkadaşım inanılmaz güzellikte bir tavla setine takıldı. 
İkinci kat tekstil bölümü. Özel iplikler Anadolu'ya gönderiliyor ve oradaki kadınlar tarafından çeşitli giyim, halı, vb. ürünler üretiliyor.  Favori ürünlerden bir tanesi yukarıdaki boyun süsü oldu. Ne yazik ki fiyatı beni biraz aştı, dolayısıyla alamadım. Blogumuz çok ünlü olduğunda belki hediye ederler :). 
Birinci katta enteresan objeler vardı. Benim ama asıl ilgimi çeken tavandaki bu güzel cam süsler oldu. 
Giriş katında Nar Gourmet'nin ürünleri satılıyor. Özellikle reçellere göz atmanızı öneririm. Başka yerde bulamayacağınız değişik reçelleri burada görebilirsiniz. Bir alt katta da ev tekstili ürünleri yer alıyordu. Aşık olduğum halılara bakmaktan fotoğraf çekmeyi unutmuşum maalesef. 

Muazzam bir emek, dört dörtlük ürünler ve en önemlisi kültürümüzü en üst düzeyde sergileyen Armaggan grubuna buradan teşekkürler. Harika bir gündü. 

Fiyatlara gelince, soğuk başlangıçlar 8-27TL, sıcak başlangıçlar 10-18TL, pideler 12-22TL ve ana yemekler 16-55TL arasında değişiyor. Ne yazık ki şarap ve tatlı büfesinin fiyatlarını öğrenemedim. Anne baba ödeyince böyle oluyor :).

It was a hot and sunny weekday when I gathered my parents and their food loving friends for a feast at the Nar Restaurant. Located just by the Grand Bazaar, it was such a perfect spot in the sense that the restaurant serves authentic Ottoman and Anatolian cuisine. When my dad realized that the restaurant was on the fifth floor of the luxury goods retailer Armaggan, he was not happy at all. Us ladies, however, immediately agreed on a tour after the lunch.  
What first caught my eye was the beautifully decorated salad bufe. Without taking a chance to say hi to the rest of the table I grabbed a plate and found myself caugt up in all the greens. Learning that it was all organic and natural, as with everything else on the menu, I got even more cheerful. 
In the end, however, I decided to leave the greens for my mom and go with the cold starters, i.e. food prepared with olive oil. 
The mashed broad beans, or fava as it is called in Turkish, was extremely soft and mixed with dill it made the perfect summer dish.  
I normally find the bean salad rather boring but for some reason I loved this one. Dried yet fresh haricot beans, chopped red onion, green onion, colorful paprika, parsley and of course olive oil... all organic and natural, hence the wonderful smell and delicious taste.     
The red pepper just killed me. I normally pride myself on my ability to handle spicy food but this time I lost it. If you are brave enough, please go ahead and try :). 
My favorite pick from the salad bufe was the sea bean. Oddly I had never heard of the name or tasted it before. With its slightly sour and spicy taste, the sea bean found itself in my love list of healthy food :). 
Turkish people looove bread. Hence we jumped up and down of joy in our seats discovering that we were offered not only one, but two of our favorite breads. 
The aged skin bag goat cheese and olive oil, served to be eaten with the bread, was beautifully presented in the glass jar above. I'll definitely use that at home to impress my guests :). 
Talking about bread... have you ever tried pide, a slightly round and flat bread with various toppings? Not many restaurants have it but luckily Nar Restaurant does. In addition the the common cheese and minced meat toppings, there were also other interesting versions you can't try anywhere else. We went with the pide with charcoal grilled eggplant, yellow cheese, and braised meat. It was so different and yummy. The eggplant had dominated the taste, which was perfectly fine.  
If you haven't noticed yet, we still haven't made it to the main course :). But considering our previous posts, you must be used to that by now... Anyways, we are finally there :). There was so much on the menu, as well as off the menu, that we decided to each try something different and then split. On a side note, Nar Gourmet products, such as the lovely spices above, were also placed on the table for us to use (and also to display products on sale :)).  
The most favored dish of the lunch was the chops of milkfed lamb cooked with dried plums. Soft and juicy, the lamb became even tastier with the dried plum sauce. The rice with different herbs was both light and aromatic; I loved it. The roasted red pepper added a nice color and decor to the plate. 
The grilled marinated lamb fillet was tasty yet not as tender as I had expected. On the contrary, the pureed eggplant sauce was probably the softest and lightest I've ever tasted. The rice was the same as the plate above, i.e. with different herbs. All in all, it was a pleasant dish. 
Our waiter insisted on something off the menu, i.e. the ovendried eggplant. I'm happy he did because it was delicious. The eggplant had been stuffed with veal cubes, mushrooms, tomatoes, pepper, onion, and yellow cheese. Especially the veal cubes had added great flavor and differentiated the meal. The rice prepared with currant is pretty normal in Turkey. It's often used as filling in in different foods. I don't like it though. Still I have to give credit for its nice preparation but I would have preferred the rice with herbs. 
Being a huge fennel fan, my mom had no difficulty deciding on her choice of dish. The stew of lamb chunks with fresh fennel was both light and delightful. It's cooked using flour, eggs and lemon. The pursley and yoghurt made the plate look and feel even healthier :). 
Unarguably my favorite vegetable is artichoke. My mom used to force me to eat it, but now I can't have enough of it. Therefore, it comes as no surprise that one of the dishes I favored most, was the hot artichoke. Both soft and crispy at the same time, the artichoke stewlike dish was cooked with potatoes, carrots, and onions. It was heavenly.  
One thing I really liked about Nar Restaurant was their differentiated wine list and support for Turkish wine producers, especially boutique ones. Most restaurants prefer to serve foreign wines, or big local wines. The 2010 Vinolus Chardonnay we tried, again from a local boutique producer, was both fruity and creamy at the same time. It didn't have that extremely oaky taste but still you could feel it was a Chardonnay. It was perfect. Unfortunately I didn't like the red Vinolus. It might be because we opened it too early, am not sure. The wine storage unit was located next to our table and displayed numerous local wines. 
The dessert buffet was impressive. The mosyt typical and well known Turkish and Ottoman sweets were all lined up in front of us. Colorful rock candies, Turkish delight in various flavors, almond and pistachio paste, sekerpare (a sweet pastry with syrup), pumpkin dessert, profiterol and much more... all superb. 
The sekerpare, i.e. short crust pastry in syrup, with soaked poppy seed became my favorite. Preparing it with hashish is not common so that was a nice addition by the chef.  
The rest of the table favored the walnut wrap. My dad even said it tasted just like the one his mother used to make. I can't think of a better compliment than that :).  
The pumkin dessert was prepared just the way my husband likes it, soft. I prefer it made hard but the taste was still really good. Especially the color was just crazy. 
Normally I'm not a profiterol fan but I liked this one cause it had orange flavor added to it. Orange and chocolate combo is a proven perfection so that was a smart move.  
It's rather rare to find almond and pistachio paste at a restaurant so when you do find, attack! :). Just pure almond and pistachio explotion in your mouth. 
Some of the small sweets on the buffet were also brought on a silver plate to the table, to have with coffee. I especially recommend the gummastic flavored Turkish delight. 
Having finished the food we decided to tour our way down to the exit. As mentioned before, Nar Restaurant is on the fifth floor of the Armaggan building. The fourth floor hosts the Culinary Center, where chefs from different regions of the country come to cook and show the various foods of their hometown. You are free to join to join to watch and later taste all the delicacies made. Please do schedule in advance. 
There is an art gallery on the third floor with various Turkish artists' paintings and other designs. Everything is for sale, including that interesting cubic sculpture in the above picture. The exhibition changes every few months. 
The second floor is the textile department. Special yarns are sent to villages in different parts of Turkey where then women knit and sew clothings and accessories. One of my favorite pieces was the "necklace" above but unfortunately it was way to expensive. Hopefully one day our blog will be so famous, they'll give it away for free :). 
The first floor had some interesting objects but what actually caught my attention was the lovely glass balls hanging from the ceiling. 
The Nar Gourmet products I described earlier are sold on the ground floor. I especially recommend the jams since there are flavors here you can't find anywhere else. 
The last floor, -1, have beautiful home textiles. Unfortunately, I was so caught up in the carpets forgot to take pictures. 

A tremendeous effort has been put into trying to show our culture in the best and richest way. Everything sold in the store and served at the restaurant is aimed at perfection. Thanks a lot for that! It was a great day...

As for the prices, the cold starters cost 8-27TL, hot starters 10-18TL, pide's 12-22TL, and main courses ranged from 16 to 55TL. Unfortunately I don' have the price for the wine nor the dessert buffet but it wasn't as expensive as expected.

    1. Cok tesekkurler Pinarcim :). Ben de tekrar kocami goturecem, o da cok merak etti... tatli bufesinden kesin ye ama. Bir de inanilmaz guzel bir istanbul desenli tavla seti var sergi eserleri arasinda, ona da bak kesin. Optum cok

  2. bizde kapalı çarşı da gezerken bir kürkçü dükkanında tavsiye ettiler bende böyle çarşıda salaş bir yer heralde diye düşünüp yürümeye başladım sonra kuyumcuya sorunca arkamı döndüm birde ne göreyim armağan mağazasının üstü dekorasyon meraklısı olarak armağanı bilmemem mümkün değil bende aynı tepkiyi vermiştim. Ama hiç pişman olmadık nefisti yemekler mezeler, çerkez tavuğu fava falan nefisti..

  3. bir de cnm tavsiyem olacak acaba post hazırlarken fotoğraf altına hem türkçe sonra altına ingilizce yazsan daha kolay olur senin içinde böyle çok uzun bir post görünüyor yorum bölümüne ulaşmak baya uzun:))

    1. cok haklisin canim ama onu denedim, yazi cok kesiliyor yorumlari geldi hep, mecburen boyle yaptim. baska bir onerin varsa fazlasiyla acigim, cok dusundum en iyisi bu yorumlari geldi. ben de bilemedim.
