Hakiki Hatay Lezzetleri İstanbul'da... / Best of the Best Authentic Turkish Cuisine at Akdeniz Hatay Sofrası

Birisi ne zaman Hatay mutfağından bahsetse içim gidiyor, böyle güzel lezzetler var mı dünyada? Algıda seçicilik mi bilmiyorum ama son zamanlarda Hatay ve yemekleriyle ilgili bir çok yazı ve görüntü çıktı karşıma. Bardağı taşıran son damla gezenyer'den arkadaşım Pınar'ın Hatay yazısı oldu. İstanbul'da da bu yemekleri tadabileceğim bir yer olmalıydı. Veeee varmış :). Aksaray'daki Akdeniz Hatay Sofrası 1985 yılından beri hakiki Hatay lezzetlerini müşterilerine sunuyormuş. Sınırsız sonsuz yemek seçeneklerinin olduğu bu restoranda Tuzda Kuzu veya Cerra Kebabı sizleri farklı bir boyuta taşıyacak. Erken saatte gidin, mide fesadı garanti :).

Whenever someone starts talking about the Hatay cuisine my mind is blown away. Hatay, a city in the far south of Turkey, is home to some of the best foods in the country. I've been meaning to go for so long but never had the chance. But lately, I've come across so many conversations regarding Hatay that it has started becoming painful not to have the chance to try the famous dishes. Luckily, Ozgur and I discovered a restaurant in Aksaray, called Akdeniz Hatay Sofrası, that serves Hatay food since 1985. Pretty late discovery :). Anyways, this is a place you don't want to miss. Be prepared to indulge in a food feast.

Historia Alışveriş merkezi'nin yanındaki Akdeniz Hatay Sofrası'nı bu kadar kolay bulmayı hiç beklemiyorduk. Vatan Caddesi üzerinde ilerlerken Historia'ya gelmeden hemen önce göreceksiniz. İki katlı restoran henüz saatin akşam üstü 5 olmasına rağmen tıka basa doluydu. En şaşırdığım nokta da ne kadar çok yabancı olduğuydu. Burayı yeni keşfetmiş olmanın üzüntüsüyle başımız öne eğik oturduk masamıza. Neyse ki menüdeki lezzetleri görünce keyfimiz hemen yerine geldi. 
Seçeneklerin fazlalığını görünce ilk başta biraz stres oldum ama karşımıza bir meze tepsisi gelince biraz rahatladım. Mezeleri az tutmaya çalışmış olsak da o kadar lezzetin arasında azı seçmek kesinlikle kolay olmadı ve tabi ki başaramadık da :). Kendisi de Hatay'lı olan garsonumuz Ahmet Bey'in yardımıyla humus, mekdus, muhammara, mumbar dolması, saç oruğu, sarma içi ve tebbuli söyledik.      
Humus herhalde bu güne kadar yediğimizin en iyisiydi. Üstü acılı tereyağ, maydanoz, turşu ve domates dilimleri ile süslenmiş meze inanılmaz hafif ve krema kıvamındaydı.
Bu gecenin favorisi Özgür için Mekdus oldu. Kebapçılardan alışkın olduğumuz patlıcan dolmasına benzeyen bu meze bizi oldukça şaşırttı. Pirinci beklerken ağzımıza tamamen farklı bir tat geldi. Meğerse Mekdus, minik patlıcan, dövülmüş biber, ceviz ve Hatay baharatlarından oluşuyormuş. 
Muhammara, yani cevizli biber, hafif acı ama bir o kadar da keyif veren bir mezeydi. Masamıza gelen pofidik ekmeği bandıra bandıra sildik süpürdük tabağı. 
Daha önce hiç Mumbar dolması yediniz mi? Cevap hayırsa burada kesinlikle denemelisiniz. Açıklamasından da sakın korkmayın. Çok ama çok lezzetli. Mumbar dolması  koyun barsağının içine kıyma, domates, bulgur pilavı ve baharatın konulduğu bir Adana-Antep yemeğidir. Daha önce de denemiştim ve o zaman da fena gelmemişti ama buradaki aynı anda hem yumuşak hem kıtır hem de tadı çok hafifti. Öyle yoğun bir koku da yoktu. 
Tebbuli ince kıyılmış maydanoz, bulgur, yeşil soğan, domates ve limon suyundan oluşan bir çeşit salata mezeydi. Özellikle diğer acılı mezeleri dengelemesi açısından doğru bir seçimdi. Buna alternatif Zahter salatası alabilirsiniz. Masaların bir çoğunda gördüğüm bu salatayı ben mutlaka bir sonraki ziyaretimde deneyeceğim.
Sarma içi, ya da bir diğer adı Kısır, masanın en acısıydı. İnce bulgur, yeşil soğan, kıyılmış maydanoz ve taze naneden oluşuyor. Acıyı pek sevmeyen kocam için fazla geldi ama ben yana yana yedim. Ertesi gün yaşadığım acı sıkıntısı da büyük ihtimalle Sarma İçi'nden kaynaklandı ama öyle olacağını bilsem yine yerim :). 
İçli köftesi hastası olan benim için gecenin favorilerinden birisi Akdeniz Saç Oruğu oldu. Hatta galiba bu keşifle içli köftenin pabucu dama atıldı :). Yayvan ve içli köfteye göre daha yumuşak olan saç oruğu yine kızartılarak hazırlanıyor. Ne yazik ki sadece iki parçasını bitirebildik ama tadı enfesti.  
Ana yemek öncesi normalde burada durmamız gerekirdi. Hatta çok daha önce ama Hatay'ın çorbalarının da meşhur olduğunu bilerek tadımlık bir yoğurt aşı istedik. Tuzlu yoğurtlu sos ile hazırlanmış minik köfte ve mantı parçacıklarından oluşuyordu. Yaz kış fark etmez, harika bir çorbaydı. 
Yazının başında tuzda kuzu ve Cerra kebabından bahsetmiştim. Buraya gelip de ikisinden birisini yemeden çıkmayınız. Bizim yediğimiz Deveci tuzda kuzu kuzunun kol kısmından oluşuyor. İç pilav ve Hatay baharatları ile %100 kaya tuzu ile kapatılarak en az 45 dakika odun ateşinde pişiriliyor. 
Tuzda kuzunun sunumu tam bir şölendi. Alevler için gelen tuzu garsonumuz kırarak kuzuyu içinden çıkarttı. Hayatımda yediğim herhalde en yumuşak etti. Kesinlikle ağır ama o kadar lezzetliydi ki parmaklarımızı yedik. 
Cerra kebabı ise yine kuzunun kol kısmı ile yapılıyor. Farkı ise arpacık soğanı, sarımsak ve Hatay baharatları ile en az 2 saat odun ateşinde pişirilmesi. Bu uzun pişirme süreleri nedeniyle gitmeden önce mutlaka arayıp siparişinizi verin.
Yemekle birlikte yöresel şerbetlerden gül sulu ve narlı içeceği istedik. Gül tadı çok baskın olsa da ben yemekle çok yakıştırdım. Özgür'se çok tatlı buldu. Gerçi o şerbet insanı değil o yüzden ona sormuyoruz :). 
Yine nefes alamayacağımız bir noktaya gelmiştik. Bu blog çok pahalıya patlayacak belli oldu :). Tabi ki Hatay'ın ünlü künefesini yemeden çıkamazdık. İsteğe göre kaymak, fıstık ve/veya dondurma alabilirsiniz. Biz tabi en ağırı olan kaymak ve fıstık istedik. Tam bir yağ ve şeker bombasıydı. Daha önce yediklerimden daha yumuşak ve çok daha fazla peyniri içeren künefenin tadı hala damağımda. Müşterilerin şekeri tavana vurmasın diye de yanında bir küçük bardak süt ikram edildi. Meğerse süt şekeri dengeliyormuş. Hiç bilmiyordum. 
Künefe yemiş olmamıza rağmen ikram olarak Kömbe adında Hatay kurabiyesi geldi. Üstündeki susamlarla bana tatlı bir simidi hatırlatırken Özgür çocukluğundaki şekerli bisküvileri anımsadı.   
Tatlıları da bitirdikten sonra geceyi birer menengiç içerek tamamladık. Bilmeyenler için, menengiç kahvesi kavrulmuş Antep fıstığı özünden yapılan ve hazmı kolaylaştırmak için içilen bir tür kahve. Beklediğimden hafif ve yumuşak bir tadı vardı. Mutlaka denenmeli. 
Lezzetlerin bir kısmını evinize götürmek isterseniz diye Akdeniz Bakkalı kurulmuş. Zahter, zeytinyağı, tuzlu yoğurt, biber salçası, Hatay peynirler, defneli sabun dahil bir çok çeşidi burada bulabilirsiniz. Biz de masada söylemeyi unuttuğumuz yeşil zeytin salatasının eksikliğini Antakya Bakkalı'ndan aldığımız kavanozda Antakya çerezlik zeytin ile bir nebze olsun telafi ettik. 

Tüm bu yemek ve içecekler için toplamda 165TL ödedik. Bunun 80TL'si Deveci tuzda kuzuydu. Soğuk mezeler 7-9TL arası, sıcaklar 12-13TL, künefe ise 8TL idi. Çaylar da tabi ki ikram :). 

Hatay'a gidemiyorsanız buraya kesin uğramanızı öneririz. Biz inanılmaz keyif aldık.

Honestly, I wasn't expecting to find Akdeniz Hatay Sofrası so easy. Located next to the Historia Mall in Aksaray, this two floor restaurant is easy to spot. Despite being only 5 in the afternoon it was already full inside. What surprised me even more was how many of the tables were occupied by foreigners and tourists. I have to admit that made me a bit sad, since I thought I had made a big discovery. But I quickly cheered up once I saw the delicious foods on the menu.   
The huge variety of options freaked us out a bit but our waiter brought us a mezze plate for us to choose among, making it easier to decide. Although we tried to keep the starters at minimum of course with so many amazing dishes, that was impossible. With the help of our waither Ahmet, who himself was from Hatay, we managed to pick hummus, mekdus, muhammara, mumbar dolması (stuffed mumbar), sac orugu, sarma ici, and tebbuli. 

The hummus was probably the best we'd ever eaten. Served with red pepper and butter, parsley, pickles, and tomato slices, it was surprisingly light and soft as mashed potatoes. 
Ozgur's favorite of the night was mekdus. This regional mezze is eggplant stuffed with mashed pepper, crushed walnuts, and Hatay spices. We're normally used to paprika stuffed with rice and minced meat so this was really unexpected and extremely tasty. Especially the crushed walnuts added something extra.  

Muhammara, i.e. Mashed chilli pepper with walnuts was a spicy yet (or and if you prefer that :)) delicious dish. In fact it was so good we finished the entire plate by spreading the muhammara on a thin and puffy bread.   
The next mezze, mumbar dolması might freak you out a bit but please be brave and do try it. Mumbar dolması, which is an Adana-Antep regional dish, is lamb intestine stuffed with minced meat, tomatoes, bulgur rice, and spices. It almost reminds me of a German sausage; soft and crispy at the same time. Anthony Bourdain would definitely have loved this :). 

Tebbuli is a simple dish made up of chopped parsley, bulgur, scallion, tomatoes and lemon juice. It was especially a perfect choice since it balanced the other rather spicy dishes. As an alternative, you can order Zahter salad, i.e. lemon thyme salad. Most of the other tables had ordered the Zahter salad so I'm definitely trying that on my next visit.   
 
Probably the spiciest mezze on our table, and maybe even on the menu, was the bulgur salad. Prepared with bulgur, scallion, chopped parsley and fresh mint leaves, this dish was pretty harsh on my intestines :), but even if I had known that, I'd still have tried it. It was very good. 
Another favorite was the Akdeniz (Mediterranian) Sac Orugu, Similar in taste and preparation to mutton balls with stuffed minced meat and crushed walnuts, the only differences are that the sac orugu has a lot softer exterior, a flat shape, and a bit more spicier taste than previously tried. The portion was too big for the two of us but heavenly in taste.     
Normally, it would have been wise to stop here, or even earlier, before the main course, but of course we couldn't resist the many regional soups Hatay is famous for. They all looked delicious but since we couldn't have them all we decided on the yogurt asi, i.e. a hot salty yoghurt soup with small mutton balls and Turkish ravioli. Despite being 30 degrees outside, it was delicious.  
Leaving almost nothing on the table we moved on to the main course. The picture you saw at the beginning of the post is the reason we came to the restaurant in the first place. That is stuffed lamb baked in rock salt. The lamb's leg part, with a special kind of rice and Hatay spices is covered with %100 rock salt and baked in wood-fired oven for at least 45 minutes. For this reason you also need to call in advance and order this dish. 
The presentation was an experience in itself. The rock salt was brought to the table burning and then once burned out our waiter cracked the salt pieces and removed them from the lamb. The lamb meat was probably the softest I'd ever tasted. Definitely a heavy meat but so tasty we literally licked our fingers.  
The table next to us ordered another special of the house, Cerra Kebab. Again prepared out of the lamb,s leg part, it is baked in a clay pot in wood-fired oven with pearl onions, garlic, and Hatay spices, this time for two hours. The Cerra Kebab needs to be pre-ordered as well.  
For drinks we ordered one of the regional sherbets, i.e. sweetened fruit juices, with rosewater and pomegranate. The rosewater flavor was really dominant but still interesting to try. Ozgur, on the other hand, found it too sweet (he doesn't like sherbet in general so might not be wise to ask him :)). 
You probably hope, for our own good, that we stopped here. But no, we couldn't leave without trying kunefe, a special and famous dessert of Hatay prepared with a special dough and goat cheese. Served hot with clotted cream and pistachio, it is a sugar and oil bomb. That's why it's served with cold milk; to balance the extreme amount of sugar. This is one thing you don't want to miss. 
As a treat on the house, we were served Hatay cookies called Kombe. They kind of reminded us of butter cookies, except for the added sesame. 
We finished our night with menengic coffee, i.e. turpentine coffee, made out of pistachio extract which helps with the digestion. It's really smooth and tasty. Definitely worth trying. 
If you want to bring home some of the tastes you've tried, there is a shop on the ground floor. Selling anything from olive oil and salty yoghurt to Hatay cheeses and flavored soaps, the Mediterranean store is perfect to bring home a tasty gift.  

All in all, the feast cost us 165TL. The lamb in rock salt cost 80TL. The mezzes around 7-9TL, hot starters 12-13TL, and the dessert 8TL. 

If you want to try authentic Turkish food, this is a must go.

  2. walla benim teyzemler hatayda ne zaman gitsek yemek konusunda ihya olup donuyorum :)tek kelimeyle harika bir mutfaklari var:) bir tek mumbar dolmasini bilmiyordum sayende ogrendim hayatta denemem hic bana gore degil hahahah :))

  3. harika bir yazı olmuş yıldız.yurdumuzun tüm yemeklerini severim ama Gaziantep ve Hatay mutfağı benim için ayrı:)yazıyı okurken arada bir yutkundum valla....offf künefe olsada yesek yani:)bide unutmadan hatay has kral ı da denemeyi unutmayın. hem aksarayda hemde floryada şubeleri var benim favori mekanım...aynı zamanda kahvaltısını da ŞİDDETLE tavsiye ederim.hadi afiyetle kal:)

  4. That is some meal, i'm impressed you made your way through all of that food. In particular the salt-baked lamb looks fabulous, it looks very moist and I bet it tasted wonderful. I'm particularly intrigued by the mumbar dolması too. I've never seen intestines look so intestiny before, but they sound delicious. I would definitely give them a go.

      the mumbar dolmasi even freak out my Turkish friends so I'm happy you liked it :). I promise it was delicious. If and hopefully when you come to Istanbul you have to try this place, in addition to Sampiyon Kokorec, which is a chain that serves skewered lamb intestines on bread.
